"I came to Jen for her help and guidance after she had sent me some data showing that many people with diabetes had been able to improve their current health by moving to more of a plant based diet. I had been experiencing painful diabetic neuropathy; difficulty with the diabetic medication (gastro issues) and for some time had been wanting to try more plant based options within my current meal plan. By cutting out dairy (skim milk, cottage cheese, yogurt, margarine) and switching to almond milk, using vegan butter and learning how to adapt nutritional yeast to make a "cheese-like" flavour for recipes, my gastro problems soon started to subside and are now gone. This was an almost immediate change for me. The second part of my plant based journey was learning all about the importance of beans (black beans, chickpeas, red kidney beans and lentils) and what to do with them. Jen provided excellent recipes tailored for my diabetes (low sugar), where to find best choice of ingredients in a grocery store, recipes that she and her family use and also others from reputable vegan websites.

All the information Jen provided to me was very well laid out and easy to follow. She always did a check in after a couple of days and if I was unsure of something you always got back to me. As your family are true vegans your knowledge of plant based eating is "superb"! I couldn't have done this without your help. Jen I can't remember the last time I had red meat. I do eat fish and maybe chicken once a week but prefer my veggies . For me I just wanted to try something different rather than meat but didn't really know how to get started. By making these changes and continuing with my walking program, I was able to lower my A1C (average level of blood sugar) which allowed me to reduce my diabetes medication. I was always comfortable with eating brown rice/pasta so this wasn't an issue for me. The tofu was difficult at first but I think I have mastered it as well. I think making little changes first and gradually working onto others was what worked best for me. And of course, YOU Jen!!!!! "
